This recipe came about when I was struggling to figure out what to make Vy for her birthday! I knew I wanted refined sugar free, dairy free, gluten free, guiltfree YET indulgent and decadent. I wanted it to be a guilt-free, guilty pleasure... double negative? Immediately I thought chocolate. Then I thought, white chocolate. Then I thought, passionfruit. This morning I was torn between the choice of making pancakes or eggs for breakfast. No, it wasn't a por que no los dos kind of morning where I end up having a stack of pancakes with eggs on the side. I will never understand how people eat eggs and bacon with their pancakes, it seems like a bizarre flavour combination, but hey, I'm the one drinking vegetables in my morning smoothie. I felt like trying a new way to have my vegies this morning and baked eggs seemed like a really good idea! So I popped open the pantry to look for a can of tomatoes to start. There was none left. Passata sauce was smelling funny. And tomato paste had to go into the bin. Maybe I should just go for my green smoothie this morning with a soft boiled egg on the side........ This sad sounding breakfast (it's actual my usual go-to) was as sad as the Melbourne winter weather. Then I thought to myself, 'why not make my own tomato sauce?!' I opened up the fridge and sitting next to the cool cucumbers were some fresh, ripe tomatoes. Rolling up my sleeves and not knowing how this was gonna turn out, I started making some Italian baked eggs for my sister and myself. And guess what... they tasted amazing. I cannot wait to try different variations of these baked treasures of gold next time! And a perfect way to stay warm this winter.
I added a sausage to my lovely sister's ramekin as she needed some meat with hers. Serves 2 Ingredients: 4 tomatoes (or 1 can diced tomatoes) 1/2 cup water 2 cups spinach 1 onion 2 garlic cloves 1 can butter beans 2 eggs 3 tsp dried herb mix 1 tsp ground sage 1 tsp pepper 1 tsp sea salt (can omit with canned tomatoes) Method:
I probably can't go one week without pancakes for breakfast! I carefully plan out a day where my sister and I are both at home in the morning to whip up these fluffy stacks of goodness, where we're in no rush and can savour them with our favourite toppings. Despite my crazy final year studies last year, I still made sure that I had time for a laid-back breakfast with my sister which usually landed on a Sunday. Hence came to existence our glorious Pancake Sundays! My blender has become my best friend when it comes to making (lazy) food since it makes a minimum mess and all the ingredients just go into one machine. And I have low patience when it comes to cooking so I'm always opting for the quickest way to get food in my belly. Here is my basic pancake recipe which you can tweak up, spice up, and top up with whatever you feel like, whether it's chocolate, green tea, carrot cake or pumpkin pancakes! What's even better is that this recipe is free of refined-sugar, refined-flour and dairy! Makes 6-8 pancakes
Ingredients: 1/2 ripe banana 1 egg 3/4 cup almond milk (any other milk works too) 1/2 cup buckwheat flour* 1/2 oat flour* 1/2 tsp cinnamon 1/2 tsp baking powder *Note: You can make your own buckwheat & oat flour by finely grinding rolled oats or buckwheat kernels in a blender. For a gluten free recipe, you can omit the oats, or use a gluten-free version. Method:
The best part is getting creative with your toppings which can range from anything like Greek yoghurt, crushed almonds, pepita seeds, fresh or frozen fruit, jam, honey, rice malt syrup or, let's not forget, peanut butter! Now that high school is officially over, I can enjoy these pancakes whenever I want! Sadly though, my Personal Training course runs all day on Sundays, meaning Pancake Sundays will be put on hold for a few months! But no fear, Pancake Mondays through to Saturdays just might make up for it. |
