I have been craving falafels for weeks... months..... a long time now. But most places which sell falafels are fried in oil rather than baked, so I decided to make my own healthy baked falafels!
I had decided on this quite a while ago. But I kept turning my chickpeas into hummus so these falafels cravings became more and more intense. Until, at the start of this week, my friend invited me to the 4th International Falafel Day on Facebook!!!!!!!
Suddenly I was obliged to have falafels on this day! I started counting down from the start of this week to this day where I had to make falafels. There simply was no other choice.
Recently I'd also purchased a small hand mixer and food processor, and, after using it once to make that hummus that could've been a good batch of falafel, I have found my newest partner-in-crime in the kitchen.

In the midst of studying for my exams and a sudden hunger pang in my stomach on 12th June, I got up from my work station, popped open a can of chickpeas... and made falafels for the first time.
Happy 4th International Falafel Day! Cravings, be gone!
Makes 8 large falafels
Ingredients:
1 can of chickpeas, drained and rinsed
1 handful of parsley, chopped
1 handful of coriander, chopped
1-2 tsp cumin
1 tsp turmeric
1 tsp ground sage
1 tsp cayenne pepper, depending on how spicy you like it
Juice of one lemon
1 garlic clove, chopped
Half an onion, diced
1/2 tsp baking powder
2 tbs water
Note: Slowly add water after processing the ingredients if the mix is too dry.
Method:
Makes 8 large falafels

Note: Slowly add water after processing the ingredients if the mix is too dry.
Method:
- Preheat your oven to 180°C. Line a baking tray with baking paper and lightly spray with oil so your mixture won't stick.
- Add all of the ingredients into a food processor and blend until well combined, but not puréed. This will allow your mixture to hold together better. Add a dash of water if the mixture is too dry to hold together. Add some flour (oat, wholemeal, coconut, gluten-free, plain) if the mixture is too wet.
- Roll out a spoonful of falafel mixture with your hands then place onto your greased baking tray.
- Bake in the oven for 15 minutes, then turn over to the other side and bake for a further 15 minutes, or until golden.
- Serve with pita bread, salad, hummus, natural yoghurt and tahini!
