Makes 8-10 small pancakes
Ingredients:
1 ripe banana
1 egg (optional if vegan)
3/4 cup soy milk (any other milk works too)
1 generous handful of spinach
1 tsp Matcha Maiden Mix n Matcha
1/2 cup buckwheat flour
1/2 cup almond meal
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 lemon
Ingredients:

Method:
- Mix all the ingredients excluding the baking powder and lemon in a blender or small food processor until green and smooth.
- Add baking powder and lemon (this will help to make the pancakes fluffy)
- Preheat a non-stick fry pan at a medium heat and use a small ladle to spoon batter onto pan.
- Cook until bubbles appear on the surface then flip over to cook the other side until lightly browned. Then serve and enjoy!
